A Chelsea (Chel-see) bun may look like a traditional sweet roll, but instead of sugar and cinnamon, Chelsea buns may have citrus, currants, and a blend of warm spices referred to as English baking spice. To make my Chelsea buns, I first make strips of candied lemon peel with bright and smooth organic lemons. This adds the best lemon flavor! The baking spice starts with whole spices, which I toast and grind for every bake day. These are not as sweet as an American cinnamon roll. They are an excellent mate for coffee or tea.
