Oh-Scone-ee. This playful name is a mashup of our beautiful Oconee County, Georgia, and my favorite thing to bake—scones. I have over 30 varieties in my repertoire! Choosing which scones to offer in my core menu has been challenging, but watch out for specials where I offer something new for limited release.

A Chelsea (chel-see) bun may look like a traditional sweet roll, but it has a distinctly different flavor and texture compared to the cinnamon rolls and sticky buns we find in the USA. Instead of sugar and cinnamon, Chelsea buns feature citrus, currants, and a blend of warm spices known as English baking spice. To make my Chelsea buns, I first prepare strips of candied lemon peel using bright, smooth lemons—this adds the best lemon flavor! The baking spice starts with whole spices, which I toast in small batches. These aren't as sweet as an American cinnamon roll (also on my menu), and they make an excellent companion to coffee or tea."

Friends, I'm so glad you asked! As cottage bakers, we have many rules to follow, and the regulations covering frosting are particularly tricky. To my mind, the best frostings are made with quality dairy at their core—cream, Greek yogurt, cream cheese, or even egg whites. Unfortunately, these ingredients aren't currently allowed in frosting applications. Rather than create something with non-perishable ingredients I'm not comfortable serving, I choose not to offer them. If the rules change you can bet I'll be slathering cream cheese frosting on your cinnamon rolls. Until then please know that everything I sell is compliant with current regulations, made with whole foods, nothing artificial whatsoever, and completely from scratch.
